Iglesias has a long career in the food industry having worked alongside of Chef Allen Susser, Chef Claude Troisgros, Chef Robbin Haas and Chef Jose Enrique Montes. He also led successful teams as Operations Manager at the Kimpton Canary Hotel in Santa Barbara, California and as Director of Food & Beverage in El Blok, Vieques, Puerto Rico.
