Winner of the Beverly Hill Book Award 2016 for her cookbook Flavorful Shortcuts to Indian/Pakistani Cooking, CLL teacher Farhana Sahibzada shares these simple, but powerful secrets to make your curries stand out! Try this tip on your own, or sign up for this Saturday’s special Indian cooking class in the CLL’s recently renovated teaching kitchen!
Skip the butter, but don’t skimp on flavor!
Ghee butter is an amazing way to bring out the natural flavor of your favorite Indian curry recipe. But you can still get that rich and strong flavor even without it by using oils – such as olive oil or grapeseed oil. Plus, it’s simple!
To create a rich and exotic curry without the ghee:
- Double the amount of ginger and garlic the recipe calls for.
- To prep the ginger, you can peel it or leave it whole – just remove any dried areas with knots.
- Slice your ingredients thin or even put them in your food processor together.
